I think you only get the double typing when the pokemon hatches as a delta of a same type as the original species and is not a dual type.
Example a crabrawler can be a fight fight but it changed to fight when I evolved it.
A scraggy hatching as fight delta would just fight as it loses the accompanying dark.
So I think a water eevee would make a water vaporeon without it being water water. It'd still have the aura though.
Edit: This should probably be moved to a discussion thread. I just didn't want the user to be unhappy that it's not a water water vaporeon if that is not what would happen.

It would be water water. if it evos, and its a single type, when it evos, it just Doubles.
